Spicy Noodles with Shrimp and Bok Choy
This dish is a weeknight standard for us, as it is healthy and takes no time to prepare.
-2 packages shirataki noodles
-1/2 onion, thinly sliced
-1 tb chili garlic sauce
-1 tb soy sauce
-1 tb rice vinegar
-1 tb hoisin sauce
-1/2 lb shrimp
-1 can chicken broth
-4 bulbs baby bok choy, halved
Sautee the onions in a bit of oil until beginning to soften. Add the sauces, the broth and the drained noodles and simmer for a few minutes. Add the shrimp and the bok choy, cover and simmer a few more minutes, until shrimp are cooked through.
