Ramen, Salmon and Bok Choy

A quick, weeknight meal.
This meal consisted of steamed bok choy, ramen from a package (yes, the Top Ramen of your youth), and rockfish slathered with rooster sauce and miso, and baked for about 15 minutes on 350, until flaky.

Shrimp and BBQ Pork Fried Rice


Tasty and hearty. This dish also reheats well.

-1 1/2 cup brown rice
-1/2 lb BBQ pork, diced
-1/2 lb shrimp
-1/2 cup diced scallions
-1 handful chopped cilantro
-2 eggs, scrambled
-1 head bok choy, thinly sliced
-3 tb soy sauce
-1 tb hoisin sauce
-2 tb oyster sauce
-1 tb chili garlic sauce
-1 tb fish sauce
-1 tb rice vinegar

Boil the rice as usual and set aside. Scramble the egg and mix into the rice. In a large, wide pan, sautee the bok choy in half the soy. Add the shrimp and sautee another couple of minutes, until shrimp are done. Add the rice and egg to this mixture along with all of the other ingredients and stir to combine.

Spicy Shrimp Noodle Soup with Bok Choy


A very quick weeknight meal that reheats well.

-1 lb peeled shrimp
-2 packages shirataki noodles
-1/2 onion, sliced
-1 head bok choy, chopped
-2 tb dark soy
-1 tb chili garlic sauce
-1 tb hoisin sauce
-juice of 1 lime
-3 cans chicken broth

Sautee the onions in the doy and chili garlic sauce. Add in the rinsed and drained noodles. Add the other hoisin, lime juice and broth and bring to a boil. Add the bok choy and shrimp, cover, and cook for about 3 minutes. Remove from heat and serve.

Balsamic Mustard Salmon and Ponzu Bok Choy


This was literally a 20 minute dinner. You can't beat that for timing. Take that, Rachel Ray.

Salmon
-1 tb whole grain mustard
-2 tb balsamic vinegar
-1 1/2 lb filet of salmon

Mix the mustard and vinegar and pour over the salmon. Bake the salmon on 375 for about 10 minutes.

Steamed Bok Choy with Ponzu
-1 head bok choy, chopped
-2 tb dark soy
-1 tb rice vinegar
-1 packet Splenda

While the fish bakes, steam the chopped bok choy. Mix the doy, Splenda and vinegar and pour over the bok choy.

Spicy Noodles with Shrimp and Bok Choy

This dish is a weeknight standard for us, as it is healthy and takes no time to prepare.

-2 packages shirataki noodles
-1/2 onion, thinly sliced
-1 tb chili garlic sauce
-1 tb soy sauce
-1 tb rice vinegar
-1 tb hoisin sauce
-1/2 lb shrimp
-1 can chicken broth
-4 bulbs baby bok choy, halved

Sautee the onions in a bit of oil until beginning to soften. Add the sauces, the broth and the drained noodles and simmer for a few minutes. Add the shrimp and the bok choy, cover and simmer a few more minutes, until shrimp are cooked through.

Spicy Black Bean Turnip Greens and Ground Turkey with Bok Choy


This is a simple dish of chopped, steamed bok choy that we seasoned simply with a quick ponzu of soy, Splenda and rice vinegar.


This is a quick weeknight meal that freezes well for later use.

-1 lb of ground turkey
-3 tb garlic black bean sauce
-2 tb soy sauce
-2 tb chili garlic sauce
-2 bunches turnip greens
-2 packages shirataki noodles
-1 onion, quartered and thinly sliced

Sautee the onions in the soy sauce until soft. Add the ground turkey and the rest of the sauces and cook until browned. Add the noodles and stir to coat in the sauce. Add the turnip greens and cover. Simmer for a few minutes, until turnip greens are soft. Stir everything to coat.

Dinner at Home


Miso Lime Salmon with Baby Bok Choy and Ponzu Sauce
Very healthy, very tasty and about 5 minutes of hands-on time.

Miso-Lime Salmon:
When Alexis used to eat carbs with abandon, she used honey in this dish, which made the sauce a bit more viscous, but Splenda does not alter the taste significantly.

-1 lb salmon

-3 tb miso
-juice of 1 lime
-1/2 cup water
-1 tb chili powder
-1 packet Splenda

Combine all ingredients expect salmon over low heat and simmer until relatively thick. Remove from heat and pour over your large salmon filet. Bake the salmon, covered in foil for 15 minutes on 400.

Bok Choy:
-6 heads baby bok choy, halved

-2 tb soy sauce
-1 packet Splenda
-1 tb rive vinegar

Steam the bok choy until tender. Mix the other 3 ingredients thoroughly, then spoon over he steamed bok choy.

Dinner at Home


Spicy Shrimp with Baby Bok Choy and Shirataki Noodles
Tasty, spicy and very healthy.

-1 lb tiger prawns
-5 baby bok choy, halved
-2 packages shirataki noodles
-3 cloves garlic, minced
-1 tb chili garlic sauce
-1 tb hoisin
-3 tb soy sauce
-1 tb rice vinager
-1 can chicken broth

Boil the noodles for 2 minutes, drain and set aside. Sautee the garlic in the a bit of olive oil until beginning to brown. Add the soy and chili garlic sauce and sautee another minute. Add everything except for the prawns and bok choy and simmer for 10 minutes. Add the bok choy and cover. Simmer for 2 minutes. Add the shrimp and cook until shrimp are just cooked through.

Ponzu:
-1 part water
-1 part soy
-a bit of Splenda (to taste)


Rotisserie Chicken
Straight from Costco, can't beat the price ($4.65) or the taste.
