Shrimp and BBQ Pork Fried Rice

Tasty and hearty. This dish also reheats well.

-1 1/2 cup brown rice
-1/2 lb BBQ pork, diced
-1/2 lb shrimp
-1/2 cup diced scallions
-1 handful chopped cilantro
-2 eggs, scrambled
-1 head bok choy, thinly sliced
-3 tb soy sauce
-1 tb hoisin sauce
-2 tb oyster sauce
-1 tb chili garlic sauce
-1 tb fish sauce
-1 tb rice vinegar

Boil the rice as usual and set aside. Scramble the egg and mix into the rice. In a large, wide pan, sautee the bok choy in half the soy. Add the shrimp and sautee another couple of minutes, until shrimp are done. Add the rice and egg to this mixture along with all of the other ingredients and stir to combine.
