I'm a big fan of braising and steaming in beer. Try clams steamed in beer with a little green onion and ginger. Best thing ever is beef brisket (plain of corned beef) boiled in %100 or almost %100 beer. I always use a light lager when cooking with beer. Ales are too strong tasting and take over the dish in a bad way when reduced. Good way to get rid of bud lite someone left over from some party.
