A filling soup made with beef stock.
Sausage and Vegetable Soup
A filling soup made with beef stock.
-4 chicken chipotle sausages, diced
-1/2 onion, diced
-2 carrots, peeled and diced
-1 turnip, peeled and diced
-1 lb spinach
-pepper to taste
-3 can beef stock
Sautee all veggies in a bit of olive oil until beginning to soften and color. Add the stock and pepper and bring to a boil. Reduce to a simmer, cover and cook until veggies are tender. Add spinach and sausage, simmer for 2 minutes and then remove from heat and serve.
