Lamb Chops and Brussel Sprouts

Quick and easy, with leftover brussel sprouts.
Lamb Chops
-8 lamb chops
-2 tb dijon
-1/4 cup peach nectar
-salt and pepper to taste
Marinate the lamb chops in the other ingredients for about an hour. Then grill for about 5 minutes in the George Foreman.

Prawns with Fenugreek Cream Sauce
This sounded better than it was. For some reason the sauce and the shrimp just didn't mesh that well. I simply sauteed some prawns in the fenugreek cream sauce that I usually use for lamb chops, and then poured it over some leftover bulgar pilaf.

Scrambled Egg Lettuce Wraps

Usually we reserve lettuce wraps for a Chinese style ground beef or turkey mixture. However, we had some lettuce, and I decided that scrambled egg wraps might be tasty. I chopped up some of the leftover spinach and mustard green mixture, added a few eggs, scrambled and topped with hot sauce.

Leftover Mash Up
We had a bunch of leftovers, so Alexis added some sliced chicken sausage to the caramelized onions and peppers (from the super bowl) and some spinach she had previously frozen lest it go bad and we had a nice, healthy dinner, with leftovers for lunch the next day.

Sausage, Squash and Brocolli Mash
Leftovers are not usually great, in and of themselves. However, when you can reinvent them by adding a few other ingredients, it can be very satisfying. We had a bunch of leftover Warm, Spiced Squash Salad and to that we added some sauteed onions, steamed brocolli and chicken sausage. We heated it all through on the stove and had a great, healthy meal made from leftovers and what we had in the fridge/freezer.

Bacon Scramble with Fennel-Tomatillo Salad

The acidity of the salad pairs well with the richness of the bacon and eggs. Also, the salad was leftover from the other night, so this was a great way to use op the leftovers without feeling like we were eating leftovers.
-1/4 onion, diced
-handful of grated cheese
-5 eggs
-4 slices of bacon, cut into lardons
-pepper to taste
Heat the bacon pieces and onion in a pan over medium high heat, stirring frequently. When everything is crispy and the fat has rendered, drain the bacon and onions and put back in pan. Reduce heat to low and add in the slightly beaten eggs. When eggs are almost cooked through, sprinkle the cheese and stir the eggs until done.

Leftover Kielbasa with Mustary Onions and Roasted Zuchinni and Eggplant
The keilbasa fared well in the re-heating, but the veggies were a bit mushy.

Leftover Tomato, Cucumber and Fennel Salad
These veggies all hold up well to a day or so of refrigeration with little softening.

Leftover Chicken and Cheese Enchiladas
We found out that this is a meal that reheats really well. Just remember to bring the salsa in a separate container so that you can put it on after the main dish is heated.

Sausage Noodle Soup
A tasty take on chicken noodle soup, made with all the leftover veggies cluttering the fridge.
-3 large, white radishes, peeled and diced
-3 celery stalks, diced
-8 leftover rainbow chard stalks, diced
-1/2 onion, diced
-1 package kelp noodles, chopped
-6 cans chicken broth
Sautee onions, celery, chard and radish in a bit of olive oil until beginning to brown and soften. Add the broth, noodles and the kielbasa. Cover and simmer until veggies and noodles are soft.

Leftover Farmer's Market Salad
Still satisfying and not wilted, since there's no lettuce in this salad.
