Lunch at Work


Leftover Spinach Curry and Artichoke and Sundried Tomato Mini Quiche
These quiche are a perfect lunch, and the leftover spinach was still tasty.

Quiche:
-8 eggs
-2 cups half and half
-salt and pepper to taste
-1 cup marinated artichoke hearts, diced
-1/2 cup sundried tomatos, minced

Mix all ingredients thoroughly, and bake in a greased muffin tin for 25 minutes, or so, until the tops are golden and a toothpick comes out clean.
