Lunch at Work

A little something from home:


Ajvar Chicken Salad
A new twist (for us anyway) on chicken salad.

-1/2 rotisserie chicken, shredded
-1/4 cup mayo
-1/3 cup ajvar (roasted red pepper, eggplant and garlic puree)
-juice of 1/2 lemon

Mix all ingredients thoroughly.


Leftover Chicken Noodle Soup
Even better the day after, when the flavors have had a chance to meld.

Mixt Greens:

Create Your Own Salad
Spinach, Filet Mignon, Cucumber, Red Onion and Marinated Artichoke Salad with Blue Cheese Dressing. A very good salad, overall.
