Dinner at Home


Brocolli and Cheese Soup
Hearty and full of veggie goodness.
-3 cans chicken broth
-1 lb brocolli
-1 cup shredded cheese (I used Dubliner)
-1/2 onion, chopped
-4 cloves garlic, peeled

Sautee onions and garlic in a bit of olive oil until beginning to brown. Add broth, cover and bring to a boil. Add brocolli and cook, covered, until tender. Puree in the pot with an immersion blender. Remove from heat and stir in the cheese.


Big Salad with Balsamic Vinagrette
Romaine, tomatos, avocado, onion, bell pepper and artichoke hearts.
