Saturday Brunch


Radishes with Butter and Sea Salt
Simply dip the radishes in a bit of butter, then in the salt and enjoy.


Bacon, Egg and Cheese Breakfast Burrito
Protein packed in a low carb-high fiber tortilla and topped with salsa verde, this was a healthy and filling breakfast.

Crab Salad with Poached Egg


Since we usually eat bacon and eggs for breakfast, this was a welcome change.

-10 oz crab meat
-2 tb mayo
-2 stalks celery, minced
-1/4 red onion, minced
-juice from 1 Meyer lemon
-salt and pepper to taste

Mix all ingredients thoroughly. Serve with mixed greens and a poached egg.

Saturday Brunch at Home

We hadn't done Christmas with Alexis's sister and brother in law, so we decided to do a leisurely Saturday brunch at our house.


Tomato, Basil and Cheese Scramble with Bacon


Fresh Fruit Salad with Apples, Pears, Raspberries, Blueberries and Blackberries
Dressed simply with lemon juice.


Crepes
This delicious recipe is a perfect backdrop to fruit, or just plain lemon and sugar.

-1 cup flour
-1 egg, beaten
-1 tb melted butter
-1 pinch salt
-1 and 1/2 to 2 cups milk

Whisk everything together and then ladle into a a hot, greased pan. Flip when edges begin to brown. Cook for about 15 seconds and flip onto a plate. The stack of crepes can be kept on a plate in a 200 oven, covered, until ready to serve.

Brunch at Home

We ran some errands in the morning and were hankering for a filling meal.


Caprese Salad
Tomato, fresh mozzerella and basil layered and seasoned with balsamic vinager, olive oil, salt and pepper.


Tuna and Olive Oil
This was canned tuna that was in Giao's x-mas stocking and that Alexis' mom claims is the best ever. It was far better than regular canned tuna.


Baked Egg with Tomato, Parmasean and Basil
Alexis got all these little ramekins recently and wanted to make some use of them. These little eggs were very tasty.


-2 eggs
-1 small yellow tomato, diced
-2 tb parmasean, grated
-2 leaves basil, shredded
-salt and pepper

Inside of each ramekin, arrange the tomato along the outside rin, creating a hole for the egg. Break the egg into the hole and season with salt and pepper. Bake at 400 for about 15 minutes, or until the egg is almost cooked. Put 1 tb of parmasean on top of each and bake for another minute or so, until the parmasean is melted. Sprinkle with basil.

Playoff Party at Home


Chili con Carne
Giao's amazing chili. It has no beans, so it is lower carb than most chilis.


Clam Chowder
This is an incredibly rich version of clam chowder, adapted from the Duke's (of Seattle) restaurant recipe. The one major change is that we use turnips instead of potatos.

-4 strips bacon, cut into lardons
-1 onion, diced
-3-4 celery stalks, diced
-3 turnips, peeled and diced
-1 Costco sized can of chopped sea clams (reserve juice)
-4 cups heavy cream
-1 cup half and half
-1/3 cup flour
-2 tb butter
-garlic powder, cayenne, white pepper, black pepper, salt to taste
-2 bay leaves
-1 handful fresh basil, chopped
-1 handful fresh parsley, chopped
-1 handful fresh dill, chopped
-1 ts dried marjoram

Cook bacon until translucent in a deep pot. Add the onions, celery, spices and butter and sautee for until veggies are soft. Add the flour and cook for a few more minutes over low heat. Add the liquids and bay leaves, including the reserved clam juice and bring to a boil, then reduce to a simmer. Add the turnips and cook until tender and the soup has thickened. Add the fresh herbs and the clams, cook for a few more minutes.

A friend was kind enough to bring over cheesesteaks in honor of the Eagles. They were delicious.


Artichoke Jalapeno Dip
This dip from Costco was pretty good on veggies and pita chips.

For dipping or just munching.


Stuffed Pepperoncinos
These are a derivation of jalapeno poppers, but they are served cold and not deep fried.


Bagel Station
Bagels, cream cheese, lox, red onion, capers and lemon--all the fixings for a fabulous breakfast.

Brunch at a Friend's House, San Francisco, CA


Deviled Eggs
This 1950's classic was our contribution to the brunch.

-a dozen eggs, hard boiled, peeled and halved lengthwise
-1/8 cup mayo
-2 tb dijon
-1 tb garlic powder
-1 ts paprika, plus a bit to dust
-salt and pepper to taste

Pop the yolks out of the halved, hard boiled eggs and put in a bowl. Combine with the rest of the ingredients and either spoon the mixture into the now empty whites, or make a pastry bag by cutting the tip off of a ziploc bag. Dust with paprika.


Bacon
Good bacon, bad picture. Nothing says a good party like free-flowing bacon.
