Oxtail Stew
Hearty Oxtail Stew
This was meaty, not too gamey and very filling.
-3 lbs oxtails
-1 onion, diced
-6 large carrots, peeled and cut into chunks
-3 turnips, peeled and cut into chunks
-1 can chickpeas, drained
-1/2 cup brown rice
-1 bunch turnip greens, diced
-2 cans diced tomatoes
-water to cover
-1 tb turmeric
-1 tb fenugreek powder
-salt and pepper to taste
-1 onion, diced

-1/2 cup brown rice
-1 bunch turnip greens, diced
-2 cans diced tomatoes
-water to cover
-1 tb turmeric
-1 tb fenugreek powder
-salt and pepper to taste
Brown the oxtail in a deep pot. Add the onions, carrots and turnips and cook for a few minutes. Add the spices and stir to combine. Add everything else. Bring to a boil. Reduce to a simmer and simmer, uncovered, for about 2 hours.

Stuffed Purple Cabbage Rolls
This recipe was different from the last time I made cabbage rolls in only a few ways. This time I 1) added 1/2 cup cooked quinoa to the filling; 2) added 1 bunch of chopped, sauteed turnip greens to the filling and 3) used beautiful purple cabbage.

Spicy Black Bean Turnip Greens and Ground Turkey with Bok Choy

This is a simple dish of chopped, steamed bok choy that we seasoned simply with a quick ponzu of soy, Splenda and rice vinegar.

This is a quick weeknight meal that freezes well for later use.
-1 lb of ground turkey
-3 tb garlic black bean sauce
-2 tb soy sauce
-2 tb chili garlic sauce
-2 bunches turnip greens
-2 packages shirataki noodles
-1 onion, quartered and thinly sliced
Sautee the onions in the soy sauce until soft. Add the ground turkey and the rest of the sauces and cook until browned. Add the noodles and stir to coat in the sauce. Add the turnip greens and cover. Simmer for a few minutes, until turnip greens are soft. Stir everything to coat.

Kale, Turnip Greens and Ground Beef Curry Recipe

We had a lot of greens in the house and we needed something to do with them. This ad-hoc curry turned out to be just the think. I'd never really heard of making a curry with ground meat until I read Vij's cookbook and although this recipe isn't from that book, but rather, Alexis' head, it turned out quite well.
-1 lb ground beef
-1/2 onion, chopped
-10 cloves garlic, peeled
-1 can diced tomatos
-salt, curry and turmeric to taste
-turnip greens from 4 turnips, chopped
-1 bunch kale, chopped
Sautee the ground beef until beginning to brown. Drain excess fat. Puree the onion, garlic and tomatoes in the food processor until smooth and add to the pan. Add the spices. Stir to combine. Add the greens, cover and simmer for about 20 minutes. Remove the cover and simmer until a thick sauce has formed.
